You asked for it!
We know you have been waiting to get the recipe for the Gelatin Mass (as we use it in quite a few of our dessert recipes). This is very easy to make, and it requires only two ingredients. This is the method we use in our shop, and it works well with our creams. The ratio is 1 part Gelatin to 6 parts water.
Ingredients:
- Gelatin Powder: 300g
- Cold Water: 1800g
Method:

Bloom the Gelatin
Add gelatin to a container and pour cold water over it. Mix well and remove all the bubbles from the surface.Put it in the fridge to set.

Dissolve the Gelatin:
Once set, gently heat the mixture in the microwave for 4-5 minutes. Alternatively, you can heat it in a saucepan over low heat until it dissolves completely. Be careful not to exceed 55°C (131°F).
- Mix and Cool:
Wrap the mixture and set it in the fridge for up to 12 hours before use. Allow the gelatin mass to set in the refrigerator until firm.
Once set, it can be cut into cubes or used as needed in your recipes.By following these steps, you can create a versatile Gelatin mass that can be used in different recipes, from desserts to savoury dishes!
