Ingredients:
- Honey: 400g
- Sugar: 800g
- Eggs: 8
- Butter: 200g
- Flour: 2100g
- Water: 40mL
- Bicarbonate of soda: 1 Tbsp
Method:
Bring the Honey to a BoilIn a saucepan, bring the honey to a boil over medium heat. This step helps to enhance the flavour and texture of the dough.
Add Baking Soda
Once boiling, add the bicarbonate of soda and cook for 1 minute, stirring continuously to ensure even distribution.
Combine Sugar and Water
Next, add the sugar and water to the mixture. Stir well to combine all the ingredients.
Cook the Mixture
Continue cooking while stirring constantly for 5-10 minutes until the mixture turns a nice golden colour. This caramelization adds depth of flavour to your dough.
Make Caramel
Bring the mixture back to a boil to create a caramel. Once bubbling, add the butter and stir until fully melted and incorporated.
Cool Down
Remove the saucepan from heat and allow the caramel mixture to cool down. This step is crucial to avoid cooking the eggs in the next step.
Add the Eggs
Once the mixture is cool, add the eggs and stir until well combined. This will give your dough a rich texture.
Combine with Flour
Gradually add the caramel mixture to the flour, mixing until a smooth dough forms. Ensure everything is well incorporated for the best results
