This chocolate glaze for your eclairs is a very easy recipe that we use daily at our shop. You'll need only a few ingredients, and it's based on a simple ganache. Once you've nailed it, you just need to melt it and glaze your eclairs - we can show you how in another tutorial.
Ingredients:
- Dark Chocolate 54%: 2040g
- Thickened Cream: 1020g
- Golden Syrup: 84g
- Butter: 84g
Method:
1. Prepare the ingredients:
- Combine Dark Chocolate, Gold Syrup, gold syrup, and butter.
- In another pot, gently boil your thickened cream, stirring gently to ensure even heating
2. Combine with chocolate-
- Pour the warm cream mixture over the chocolate
- Fold slowly with a spatula until a shiny consistency is achieved
3. Rest and store:
- Let the glaze rest for 12 hours before using
- Store in an airtight container
