How to make vanilla glaze for your eclairs

Actually, this recipe is made with white chocolate, but we call it vanilla glaze since that's the one we use to glaze our vanilla eclairs. This is a very easy recipe that requires only a few ingredients. Once you've nailed it, you can decorate your eclairs and add a touch of glitter like we do

Ingredients:

  • Gelatin mass: 224g
  • Whole milk: 320g
  • Glucose syrup: 272g
  • White chocolate: 504g
  • Neutral gel: 464g
Method:
  1. Prepare the mixture:
    • Combine gelatin mass, milk, glucose syrup, and neutral gel in a pot
    • Heat the mixture to 50°C (122°F), stirring gently to ensure even heating
  2. Combine with chocolate:
    • Chop white chocolate into small pieces for even melting
    • Pour the warm mixture over the white chocolate
    • Emulsify (blend) until smooth and completely combined
  3. Rest and store:
    • Let the glaze rest for 12 hours before using
    • Store in an airtight container
